I make a loose variation of a green goddess salad dressing every other week then throw it over romaine hearts or kale or iceberg lettuce when we don’t really want to cook. We round out the meal with cheese and a baguette on the side or something else fun and easy.
The dressing is like 5 bunches of whatever herbs (cilantro, basil, mint, dill, etc - it’s a good way to use herbs that are on their last legs in the fridge), a couple garlic cloves, an anchovy fillet or two, salt, pepper, maybe some green onion or white onion or shallot, lots of olive oil, lemon juice, and maybe a quarter to a half cup of Greek yogurt all thrown in the food processor.

Loved this post! And in Caroline's honor - the most frequent meal in weeknight rotation is some variation of a bag salad mix + chicken + in a wrap. We also love Budget Bytes sheet pan fajitas, bbq chicken meatballs and kofta meatballs. I'll drop links, they're easy and I can prep during nap time!
I am deeply obsessed with Caro's tempura salmon! We make it nearly weekly in our house. Everyone eats (at least some of) it! And I use TJs frozen rice to cut down on prep time!!
I loved Caroline's answer to her failed attempts at friendships b/c it's so relatable...it really is like dating...such a learning process and now I can tell much quicker when my friend date and I aren't MFEO! PS...The microwave shortcuts? As someone who makes eggs in the microwave, I've never felt more seen!
